Quick Fish Supper

Cod fillet on a bed of greens with a Seaweed Teifi cheese sauce.

 
 

You will need a ceramic dish that can go under the grill

Serves 2

Ingredients 

  • 2 large handfuls of seasonal greens

  • 2 fillets of white fish

  • 1/2 pint of milk

  • 70g butter

  • 45g plain flour

  • 250g Seaweed Teifi cheese cheese, grated

  • Salt and pepper

 
 

Method

  1. Place fish in pan and cover with the milk. Bring to the simmer and cook for 3-5mins dependant on thickness of fish. You are looking for it to just start to flake when you push it with a finger.

  2. While fish cooking roughly chop the greens and gently fry them in 1oz of melted butter until just cooked.

  3. Add the cooked greens to the bottom of the dish and lift cooked fish out and place on top.

  4. Add the remaining butter and the flour to the greens pan, whisking to create a roux and let cook out for 1 min while stirring. Whisk in the milk from the fish a little at a time to make your sauce.

  5. Once the sauce is smooth add the cheese and season to taste.

  6. Pour the sauce over the greens and fish

  7. Finish under a hot grill until it is bubbling and browning on top.

  8. Alternatively you can get it to step 7 in advance and pop it in the fridge and then cook it in a hot oven for 10-15 mins from when you need it.
