Caws Teifi Cheese

Teifi Gouda is a Welsh, Gouda-style cheese made by Caws Teifi, known for producing farmhouse cheeses in West Wales. It’s a semi-hard cow’s milk cheese designed in the style of traditional Dutch Gouda, but with its own local character.

The texture is smooth and creamy when young, becoming firmer and slightly more crystalline as it matures. Flavour-wise, it starts mild and buttery with a gentle sweetness, then develops deeper nutty, caramel-like notes with age. It’s typically wax-coated, which helps preserve moisture and gives it that classic Gouda appearance.

Compared with Teifi’s Caerphilly or halloumi-style cheeses, the Gouda version is less crumbly and less salty, leaning instead toward a rich, mellow profile that works well for slicing, melting, or eating on its own. It’s the kind of cheese that sits comfortably on a cheeseboard but also melts nicely into toasted sandwiches or cooked dishes.
